My family and friends know that I LOVEEEE coffee, and one of my dear friends gave me a great Christmas gift this past year…a package of coffee !  WHOOO HOOOO !   Come to find out that the coffee is from her uncle’s business in Minnesota…so trying this coffee was exciting!

Little did I know, I was about to be hooked.   As soon as I took a sip, I noticed something different about this coffee.   It was smooth and delicious, but most of all, it didn’t taste bitter or acidic.   And then, I took a closer look…..

HAPPY NEW YEAR ! Time for resolutions…reflection…and candy?????

I know….the first of the year is not the time to think about candy!  Especially after eating so many goodies during the holidays !!!  But, I had to share an incredible recipe that my dear friend, Rhoda, unfortunately introduced me to because now I AM ADDICTED !   So, even though it is time for resolutions…which  “eating healthy” is at the top of all our lists :) , I had to share this recipe that we enjoyed and enjoyed and enjoyed over the holidays …..read it over…. print the recipe,  and store with those Christmas decorations….and next year, YOU MUST TRY THEM !  They turn out so professional that they make the nicest hostess gifts, too !  Okay….enough….on to the recipe !!

Tricia Yearwood’s Crock-Pot Chocolate Candy

36 oz. salted dry-roasted peanuts

4 oz. German Sweet Chocolate Squares

1    12 oz. package semi-sweet chocolate chips

2  ½ lbs white candy bark

Place all of the peanuts in the bottom of a crock pot.

Layer on top of the peanuts in this order:

First….layer german sweet choc squares –broken into squares

Next…layer chocolate chips

Last – layer white candy bark – broken into squares

Cover and set the temperature to WARM and cook for 3 hours.

( recipe calls for LOW, but it is known to burn the peanuts in the newer crock pots)

Do not stir.

After 3-4 hours, stir the mixture thoroughly with a wooden spoon until smooth…takes quite a few good stirs to get it all mixed !

Drop the candy into small cupcake liners ( I bought Christmas themed ones at Joann’s / Michaels)  or you can just drop onto wax paper.

A small cookie dough scoop is perfect.

Allow the candy to cool completely – you can even chill to really set.

Makes about 50 or more !

HERE THEY ARE…..FEATURED IN RHODA’S BLOG….SOUTHERN HOSPITALITY

Have fun making them….everyone will THANK YOU !  :)

Let’s make some HUMMUS !! yum !!

RECIPE DAY TODAY – WHOOO HOOOO !

One of my very fav treats is hummus.  I love it – especially in a fresh pita with cucumbers, tomato, a little fresh spinich, red onions …YUM !!

So, let’s head to the kitchen and make homemade hummus!

You will be so surprised how easy it is – and how delicious and healthy it is !

Here is what you need :

( now remember….I am going to estimate what I put in – you really can’t ruin it!  so dumping is allowed! :) )

3 cans of garbanzo beans ( rinsed and drained)

3 cloves of garlic – chopped  ( optional)

3 heaping tablespoons of TAHINI ( i find in the organic section by the organic peanut butter – it is a sesame paste)

fresh lemon juice ( about 1/2 – 1 lemon)

Olive Oil – about 1/2 cup -  I gradually pour in until it goes to spreading consistency)

roasted red peppers ( optional)

salt to taste

HERE WE GO ….

rinse beans

tahini – a hummus must have ingredient!  it will last a long time in the refrigerator after opening!

roasted red peppers and garlic

In your food processor, add all of the ingredients.  Yep, you can just dump them in there…love that !

Blend until all is mixed – you made need to add more olive oil – it should be a spreading consistency – like a paste.

You can store in an airtight container – in the refrigerator and enjoy for several days!

here it is – my favorite sandwich ….pita, tomato, cucumber, and our HOMEMADE HUMMUS!

WOWWWWWW !

For those of you who live in Atlanta, I have to share a fav place of mine to get homemade pitas in Atlanta!

At Franklin Road and 120 loop, you will find the JERUSALEM BAKERY- look for the sign along the 12o loop across from the Applebees by Franklin Road intersection- you turn onto Franklin Road and then it is located in the shopping center on the left…very unassuming, but everything is baked daily, authentic, and SOOOOOO GOOD !

One wall is lined up with freshly made pita – white or whole wheat – 5 large pitas in a bag for … $1.79!    My friend, who introduced me to the bakery,  freezes hers…and I followed her advice.  They thaw quickly and taste so fresh!

So,  buy some pitas…make some hummus and add a red onion, thinly sliced cucumber, tomato …and sit down to the perfect,  healthy  sandwich  while you shop at  Miss Lucy’s Monograms !  :)

Miss Lucy’s Monograms partners with A FRESH HOPE…

Since opening my business, I have had the pleasure of monogramming for a very special family in our local area.  Not only do they loveeeee monograms, they are a family committed to serving others.  Waverly, one of the three kiddos  in this amazing family, took it upon herself to begin non-profit organization and… A FRESH HOPE began.    A FRESH HOPE is one of our categories, and I thought I would reintroduce you to Waverly and her amazing organization that is dedicated to serve families in need as they prepare to go back to school.

So what is this special organization that has touched so many lives?  Well, I think Waverly can explain her vision the best…

Hi, My name is Waverly . I am in middle school and live in Georgia. It bothers me that kids are  homeless, or without clothes or food, that we seem to forget about these kids.  My dream is that I want  to change the world. I want to make the world a better place for someone. I realized that kids can make a difference by starting small and then growing into something really big. It is my dream to help someone in a way that could change his/her life forever. I want to give someone HOPE.

You could help kids by just donating a little to someone who could use it. It may seem hard to make a change in people’s lives but really it’s a breeze if you focus on what really counts.  A lot of people giving a little equals something so much more.

A Fresh Hope was started to give kids hope, a little at a time. We will provide back packs, school supplies, clothes, and toiletries to children.

God’s Grace Gives….

And so, with a love for others and a strong determination to share God’s Grace, Waverly has established a non-profit organization that provides needy children with the items many of us take for granted.

Here is A FRESH HOPE ‘s mission statement :
